Automatic combined group for the production of puff pastry,
pasta and ravioli.
Our automatic combined unit is ideal for the production of puff pastry, long pasta and ravioli already separated, with soft fillings of meat, fish, vegetables and cheese in different shapes (square, round, half-round, triangular, hexagon, fish, flower, heart, mushroom, etc.).
Automatic sheeter
Equipped with a bowl with a dough capacity of up to 35 kilos, removable shaft-blades and independent motorization. The automatic laminator unit is 25 cm wide and has stainless steel rollers with a special profile, capable of laminating 2.5 kg of pastry per minute. The calibrators are designed for professional lamination without stress, avoiding heating and guaranteeing a pastry with ideal organoleptic qualities.
Hygienic and Easy to Clean
All mechanical parts and bearings are spaced to facilitate cleaning and prevent contamination, and are maintenance-free and lubrication-free.
Independent motorization
This technique allows rolling the pastry rolling pins even during the production of puff pastry or filled pasta, without interrupting the production cycle.
Motorized belt
Allows you to automatically roll the pastry and set the size of the single roll.
DOUBLE-SHEET RAVIOLI MACHINE
Increased calibrating rollers
25 cm and ø 55 mm, mounted on lubrication-free bearings. The amount of filling can be adjusted during processing.
Quick configuration
The quick connection of the molds allows the format to be replaced in a few seconds, offering extreme flexibility for the production of various formats in the same production cycle. An innovative forming system has been adopted on over 60 kinds of ravioli molds.
Forming System
To obtain a perfect sealing of the ravioli sheets and therefore avoid the opening and the leakage of the filling during cooking, an efficient closing method has been applied. During the ravioli shaping, a special system of reliefs around the filling seat effectively expels the filling between the sheets of the edge, ensuring an adequate seal.
AUTOMATIC PASTA CUTTER
Automatically produces sheets of pasta for lasagna, tagliatelle, tagliolini, angel hair and pappardelle, spaghetti alla chitarra, with the desired thickness, length and width with precision and with interchangeable molds in a few seconds.
Optional:
Flour sprinkler: To dust the sheet of pasta.
Ramen version: equipment for the configuration for the specific production of ramen.
